Origin Specific Coffees at Mad Fritz
In 2022 we began roasting our own coffee beans at our brewery and malt-house. Our goal is to showcase the flavor profiles of Origin Specific Coffees from around the world using our decades of winemaking sensory experience as a guide. We felt the coffee we had in our cup wasn’t up to the same standards as our wine and beer products, Mad Fritz Coffee was born! Since then we have honed in on ORGANIC coffee beans as a core to our sourcing, Natural Wash/Fermented raw bean processing and applying a delicate roasting profile often referred to as 3rd Wave roasting.
We roast our coffees on a 1992 Probat L12 Natural Gas roaster and subscribe to a lighter touch although offer three levels of roast preferences. Our Light Roast is between a ‘New England Roast/American’ finishing at about 400-410 F and will have a brighter sense of origin and well as lower body. Our Medium Roast is would consider a ‘City Roast’ finishing at between 410-420 offering a more developed body and depth to coffee while still retaining origin. Our Dark Roast is roasted to more of a Full City Roast (finishing at 430-440 F) and is dropped in the cooling tray just as 2nd crack begins. The resulting coffee beans might have a hint of oil but very little. Our dark roast coffee is more developed than the medium , offers less sense of origin yet is smooth and rich without bitterness.
